How to Cook Mango Crepes?

Ingredients:

Crepes:

1 ¼ cups all-purpose flour

5 eggs beaten

1 tablespoon butter, melted juice of one orange

1 teaspoon grated orange rind

Filling:

3 pieces of mangoes, sliced

Topping:

10 eggs yolks

1 ¼ cups confectioners’ sugar

1 teaspoon vanilla

1 ½ cups all purpose cream

Procedures:

1. Pre-heat oven to 450 °F.

2. Put flour in a bowl. Add eggs, sugar, melted butter, orange juice, and orange juice, and orange rind. Beat until smooth. Brush flying pan or griddle with shortening. Put 1/3 cup of batter. When bubbles appear, turn crepe to brown the other side. Repeat with the rest of the batter.

3. Roll mango slices in crepes and arrange in an oven-proof glass dish.

Beat egg yolks with sugar. Add vanilla and food in the cream. Pour mixture over crepes in glass dish and bake until golden brown. Dust with confectioner’s sugar and serve hot.
