HONEY PINEAPPLE HAM

Ingredients:
1-1/2-2 lbs ham
1 (8 oz) can sliced pineapple in unsweetened pineapple juice
2 tbsps dry sherry
1/2 tsp soy sauce
1 tbsp honey
1/2 cup dried lotus seeds
1/2 tbsp brown sugar
4 oz rock sugar
1 tbsp cornstarch, mixed with
2 tbsps warm water
Water

Instructions:
Slice ham into 1/2 inch thick pieces. Drain pineapple; set aside. Mix sherry, soy sauce and honey. Put lotus seeds in saucepan, add enough water to cover then bring to a boil. Add sugar; stir to dissolve. Let simmer, stirring occasionally until seeds are tender. Place ham in heatproof dish. Top with rock sugar or honey and pineapple juice mixture. Set dish on rack in wok. Cover and steam over boiling water 30 minutes or until rock sugar is completely melted. Remove ham from steamer; put on serving dish. Pour remaining juice from heatproof dish into small saucepan and bring to a boil, stirring constantly. Add cornstarch mixture and let simmer until thick. Pour lotus seeds over ham; pour glaze on top. Garnish with pineapple slices and serve.
